The book draws on the University of Winchester's Plant-based nutrition course, the first university course on plant-based nutrition in the UK. Edited by two cancer doctors based in the UK and Canada and a specialist dietitian, chapter authors include the key exponents of plant-based nutrition in their chosen field, many with international reputations. While each chapter looks at an individual body system, the aggregate evidence from all authors is clear - eating plant-based whole foods will save millions of lives and years of suffering from chronic diseases.

About Shireen Kassam

Dr Shireen Kassam MB BS, FRCPath, PhD, DipIBLM is a Consultant Haematologist and Honorary Senior Lecturer at King's College Hospital, London, with a specialist interest in the management of lymphoma. She is also a certified Lifestyle Medicine Physician and is passionate about promoting the benefits of plant-based nutrition for the prevention and reversal of chronic diseases and for maintaining optimal health after a cancer diagnosis. In 2018 she was appointed Visiting Professor of Plant-Based Nutrition at Winchester University where she has developed and facilitates the UK's only accredited course on plant-based nutrition for healthcare professionals. She is Founder and Director of Plant-Based Health Professionals UK, a community interest company whose mission is to provide evidence-based education on healthy plant-based diets. In 2021 she co-founded Plant Based Health Online, the UK's first CQC-regulated, lifestyle medicine healthcare service. Dr Zahra Kassam MB BS, FRCPC, MSc, DipABLM, is a Radiation Oncologist at the Stronach Regional Cancer Centre, and an Assistant Professor in the Department of Radiation Oncology at the University of Toronto, Canada, specialising in the treatment of breast and gastrointestinal malignancies. Zahra received her medical degree from the Imperial College of Science, Technology and Medicine in 1995 and completed her specialist training in Clinical Oncology in the UK. She undertook three years of additional clinical and research fellowship training in Radiation Oncology at the Princess Margaret Cancer Centre, Canada, with a Masters in Clinical Epidemiology at the University of Toronto. She is a certified Lifestyle Medicine physician with the American Board of Lifestyle Medicine and counsels her patients on dietary and lifestyle interventions to optimise outcomes after a cancer diagnosis. In 2019, she co-founded Plant-Based Canada, a non-profit organisation with the mission to promote plant-based whole food nutrition that is healthy and sustainable and which supports the well-being of the planet and all its inhabitants. Lisa Simon RD, is a specialist Dietitian, graduating with first class honours in 2014 from Cardiff Metropolitan University. She has seven years clinical experience working in the NHS, providing care to patients in both inpatient and outpatient settings. She began her career working in Morriston Hospital in Swansea, seeing patients with a wide range of clinical conditions, before taking up a rotational post at the University Hospital of Wales, where she worked in neurology, cardiology and respiratory medicine. She then took up a specialist post in critical care in the Royal Gwent Hospital in Newport, before specialising in gastroenterology in 2016. Lisa left her post at the end of 2019 to set up her own freelance business; however, she continues to run weekly gastroenterology clinics virtually for the NHS. She now works at Plant Based Health Online and her special areas of interest are plant-based diets, gastrointestinal conditions, and male and female fertility.
