Use sheets of filo pastry, shop-bought puff pastry or traditional short-crust pastry to create the perfect individual pie. Combine the flavours of North Africa to make a traditional hot savoury or a delicious Tarte Tatin of tomatoes. Pies don't have to be uniform shapes with regular edges: try an open Greek Tart with Mediterranean vegetables or little parcels of chicken and leek!
